I like it roasted with onions and herbs. If you add the roasted veggies to some chicken stock and puree, depending upon thickness, it makes a wonderful pasta sauce or soup...
I almost bought one last night but I couldn't think of anyway to make it other than what I used to do: lots of butter and brown sugar. SO not on the plan! lol..
I pierce & then nuke about 8 or 10 minutes - split it &^ remove seeds...can always add a little SF syrup if you want to sweeten it up..
Any idea what serving size you can have? Is it the same as spaghetti squash?..

I have an old recipe from another diet that is great for Acorn squash. You simply split, remove the seeds. place face down on a pie plate (they don't lie flat). Nuke 10 minutes. While that is nuking, cut up an apple, add a few raisins, celery, pumpkin pie spice, and some sweetner. (FF syrup, splenda, any sweetner that doesn't change flavor when heated) After the ding, turn over (its hot) and fill with the mixture. Cover with plastic wrap leaving a vent hole and nuke another 10 minutes...
I bake one every Sunday afternoon. Split it in half, remove seeds, bake face down in a roasting pan for 30 minutes, turn over, cover with foil (or the pan's cover if it has one) and bake face up for another 20 to 30 minutes, depending on the size of the squash and doneness. Let it get cool enough for handling, then scoop it all out, keep in the refrigerator, and you've got a quick veggie to grab the rest of the week. Put a serving on your dinner plate, nuke to warm it, then sprinkle brown sugar splenda, spray with ICBINB, and yum!..
That's a great idea! I love butternut squash but thought it to be "forbidden". By the way, Pam, you are my new Nutrisystem role model!!..
I nuke small acorn squash last night - about 8 minutes I think & then let it sit about 5 more...had 1/2 then & will have 1/2 tomorrow. I like it just plain...
