This is what I do with my eggs....
Mix up with 4oz water...add some Garlic Pepper seasoning. Spray skillet with PAM and cook like regular eggs. During this process I add in a whole wedge of Laughing Cow cheese (cut it up so it's not all in one chunk) and continue cooking. When it's done I put on a plate with some salsa on top..

I'm also looking for other things to do with my eggs. I used to like them but now I can barely tolerate them. I wish I could make them into a "wrap" or a bread like I do with my cream soups...
Medifast Vanilla Custard.
1 packet of medifast eggs.
1 packet of medifast vanilla pudding or shake (I used the pudding).
1 cup of water.
1/8 teaspoon cinnamon (if desired).
1/8 teaspoon vanilla (if desired).
1 packet Splenda (if desired).
Preheat oven to 350. Mix all ingredients in the blender. Pour batter into small ramekins or mini-muffins pans. (I used silicone mini muffin pans, but if you use metal, spray them with non-stick spray). Bake until the custard is set (mine took about 15-20 minutes)..
I did not use the vanilla or the Splenda in mine, and they came out absolutely delicious!.
The recipe is 2 medifast meals, and I got 3 mini-custards for each meal. I had 3 for breakfast fresh out of the oven, and the other 3 for 2nd breakfast. I have never counted condiments, so I am not certain, but I think the recipe includes 3 condiments (maybe 2 not sure how much cinnamon and vanilla equal one condiment)...
Here's what I found..
Pancakes.
Ingredients.
1 package Medifast Scrambled Eggs.
1 package Medifast Hot Chocolate.
1 package Medifast Apple Cinnamon Oatmeal.
1/2 teaspoon baking powder.
Water.
Directions.
Mix in water a little at a time until the mixture becomes the texture of pancake batter. Spray a pan with non-stick cooking spray. Heat pan to medium-hot. Pour batter into 6 medium sized pancakes. Turn over when the bottom side is brown. (Divide into 3 meals).
Rolls.
Ingredients.
1 package of Maple & Brown Sugar Oatmeal.
1 package Scrambled Eggs.
1/2 tsp baking powder.
1/8 tsp artificial sweetener.
1/4 tsp vanilla extract.
4 Tbs water.
1/2 - 1 tsp Optional Spices:.
Cinnamon.
Nutmeg.
Pumpkin pie spice.
Directions.
Preheat oven to 350 degrees. Mix all dry ingredients, add water and vanilla, and mix thoroughly. Form into 2 small rolls and place on a cookie sheet. Smooth the tops and sprinkle with spice of your choice..
Bake for 10-11 min and then put under broiler for 1-2 minutes, just to barely brown top. Makes two meals. Refrigerate the second bun if not eaten the same day..
Crepes.
Ingredients.
1 package French Vanilla Shake.
1 package Scrambled Eggs.
1/4 tsp baking powder.
1 tsp Vanilla.
Water, to get a thin pancake batter consistency.
Walden Farms Pancake Syrup.
Directions.
Heat a small non-stick skillet. Pour enough batter to coat the bottom of the pan. cook over a medium heat until the crepe starts to bubble. Turn the crepe over using a silicon spatula and cook the other side for one minute. These cook fast, so keep an eye on them. Drizzle with Walden Farms calorie-free, fat-free, carb-free, sugar-free and cholesterol-free Pancake Syrup (2 meals).
Chocolate Muffins.
Ingredients.
1 packet Chocolate Pudding.
1 packet Scrambled Eggs.
1 tsp baking powder.
1 tsp artificial sweetener.
1/4 cup water.
Directions.
Preheat oven to 350 degrees. Mix all dry ingredients in a blow. Mix wet ingredients, then add to bowl of dry indredients. Mix well..
Spray 4 cups in a muffin pan with non-stick cooking spray. Spoon mixture evenly into the 4 cups..
Bake for 10-15 minutes. Turn off oven and let them sit for 5 minutes. Makes 2 meals..
French Toast Pancakes.
Ingredients.
1 package Medifast Scrambled Eggs.
1 package Medifast Oatmeal - any flavor.
4 oz water.
1/4 teaspoon Baking Powder.
1/8 teaspoon Vanilla.
Directions.
Place both Medifast meals and water in a blender. Mix well. Add baking powder and vanilla. Blend again..
Spray pan with non-stick cooking spray. Pour four pancakes and cook like regular pancakes. Makes two meals. The second meal can be reheated in the microwave for 15 seconds..
Top with some sugar free syrup...
Thanks everyone. I guess I will have to order some other Medifast produts to make these meals since they all seem to require 2 Medifast meals.
I don't have any shakes, puddings or oatmeals but I do have hot cocoa. I will try using that to make the chocolate muffins until I can re-order other products.
I'm super tired of all the typical egg dishes but these recipes sound promising.
