I make a delicious meatloaf with ground bison. It's very simple - the ground bison, salt, pepper, garlic powder, about 1 T of egg substitute, 1 T of Ortega Thick and Chunky medium salsa and about 6 grams of grated cheese. I top it with about 1 t of ketchup and bake at 400 for about 35 minutes. Delicious with salad - baby romaine lettuce and sliced mushrooms topped with oil and vinegar. It's one of my L&G meals!..
I use buffalo for meatballs... we call them Buffalo Balls In my homemade veggie marinara and over shiritake noodles or spaghetti squash and I am content. (recipes in my blog)...
We made this last night......It was awesome. DH is really particular about pastas so I made spaghetti squash and he added his butter and cheese...Took the rest for his lunch at work today...
One of my stand-by, no-prep lean and green's is a frozen buffalo patty from Trader Joe's thrown on my contact grill. In less than 10 mins, I have a piping hot delicious meal! I eat it with a fork and a knife with mustard on the side as a condiment and with a simple salad for my green. So good and easy!.
My birthday's coming up and I'm thinking about going to this cool steakhouse nearby and trying their Bison Ribeye - it gets rave reviews...
Okay so I have a buffalo/bison question. Our local market carries bison steak and ground bison. I checked the packages carefully and the ground bison is 100%. The fat on the ground meat is so much higher. So if I use the ground meat is it a lean instead of leanest?..
