I used individual Pyrex bowls for it. Mini loaf pans are a great idea. I'll have to pick some up! I hope you all like this. I really did!.
I initially tried to make it with an oatmeal, eggs, a banana shake, and a banana pudding. It was OK but didn't have the texture that this recipe did. Adding the extract makes it taste enough like bananas. Also I just got my new order of flavor drops and I ordered Banana Nut Crunch. I bet that would've been good in it too...
This looks to be awesome. I can't wait to try it. Unfortunately, I don't have the caramel syrup, so I'll have to vary it a little bit...
Clarification on the amount of walnuts, please?.

Sorry, it was 1/4 C or 4 tablespoons. This could be varied. BTW, I've been having this for bfast. I cut in in half horizintally so it makes two "cakes", heat it up in the microwave, and top with Davinci's pancake syrup. It's even better that way than eating it plain!..

I tweaked the recipe according to what I have on hand and made Banana Nut Muffins - using SF DaVinci Caramel Syrup, oatmeal, banana pudding, etc..
Yum!.
Even though I know it gets better when it cools, I've eaten my four mini-muffins as it came from the oven. But there are eight left... so for the next couple of days I have a great mid-morning "snack/meal"!..
Glad you like it, MamaMeow. How was the texture when you used the pudding? I can never get baked goods made with pudding to come out as good as when I leave it out. What do you do? Share the knowledge!..
They puffed up and had a crown like a muffin - still a little dense, but not as much as previously..
I used two oatmeals and one banana pudding - 2T. flax seed meal, and then I got jiggy with it. I used a big splash of egg beaters (I'll subtract from my lean) and a tablespoon of almond meal. Since I used the almond meal, I cut the amount of walnuts down considerably..
Here's how I wrote it down to remind me for the next time..
Dry:.
2 MBS oatmeals.
1 Medifast banana pudding.
2 Tablespoons ground flaxseed.
1 Tablespoon Almond Meal.
A tablespoon of chopped walnuts.
3 splenda packets.
1 tsp baking powder.
1/2 tsp baking soda.
1/4 tsp salt.
1 tsp cinnamon or more.
Wet:.
Good splash of egg beaters.
1/4 C water (add and stir bit by bit may not need all. May need more).
2 tsp white vinegar.
3Tbsp. or so DaVinci SF Caramel Syrup.
1 tsp vanilla extract.
1 1/2 tsp banana extract.
(butter flavor extract if you choose)..
