I made an apple cake (using recipes for muffins), put into a cake pan (I used 6 pkgs of apple cinnamin oatmeal). I also added some Cappella snickerdoodle drops in there for an extra "cinnaminny" flavor.

Then after it cooled, I mixed 1 packet vanilla shake and 1 packet of chai latte. I mixed it with 2 TBS n/f cream cheese (don't forget to count it), some lemon juice, 2 spenda packets, 1 TBS DaVinci vanilla syrup and some water until it got to a creamy texture. I spread it on the cake..

I cut into 8 pieces and voila.

I have Beef Stew simmering for my next meal, but I had to try a sliver, and it is so good!!.

The chai packet gave the frosting almost a caramel flavor, so it's like a caramel/apple cake..

I just hope it freezes well...

How is the texture of the n/f cream cheese frosting? And is n/f the same as Neufchatel? I bought that ONCE on accident and it was grainy. EWW! Would love to try this but am really hesitant about the cream cheese. I know, I can always have it without the frosting...

Actually, I just double-checked, and it was low-fat, not non-fat cream cheese. The consistency was fine.

I *believe* we're still allowed to have l/f cream cheese, too. It's divided up into 8 parts, so the amount of calories/fat/carbs is fairly low. It made a very thin layer of frosting. In about an hour I get my next meal, and you can bet that this is going to be it...

That sounds great. I'm not a big fan of the chai latte, so maybe mixing it with NF cream cheese will help. I like to use NF cream cheese to making lots of different flavored toppings for my muffins. All you reall need is a very thin layer to make a big difference on a muffin. Thanks again...

A little off-topic, but where are you going to stay when you go to Vegas 20 pounds lighter? Do you go see shows/fights/events, or gamble and play? Will you be doing anything special to celebrate your achievement?..
