I had a similar question and someone who's been on the program recommended this idea - use the 2 cups of eggbeaters ( a full lean serving) plus the full serving of cheese or cottage cheese, mix together with 3 cooked "greens" like 1-1/2cups cooked broccoli or frozen chopped spinach (thawed and squeezed dry). Mix it all together and bake and it's like a crustless quiche. Season with onion powder and herbs if you like.(allowed condiments) You eat 1/2 one day and 1/2 the next, since it makes 2 L&G meals. Since you're only using 3 "greens" in the quiche you can have a 1/2 serving of salad with it each day to get the rest of the green. I haven't tried it yet, but planning to this week...

Someone had said they steamed cauliflower and broccoli and then baked it with melted cheese - that would be a whole meal too..
Here's another - no cheese though. If you like stuffed peppers, I cut a pepper in half, filled each half with Morningstar Farms Grillers crumbles, 1/4 tomato sauce, some onion and garlic powder and baked it. You get to eat 2 cups of the MSF Grillers crumbles, which is a lot, so it overflowed the pepper into the baking dish. But it was a pretty good OP vegetarian meal. You could leave out some of the crumbles "meat" and add some shredded 2% cheese, like mozzarella or cheddar-jack. Not sure how you would measure that..
Somewhere on the board I saw some tofu recipes, and one was for tofu "hummus" - that looked good, but I haven't tried it..

Hey everyone it's so great we have a veiggie friendly community haha I love it keep on keepin on you guys :-D I love all the receipes I am actually makin a mock veggie shepherds pie wit cauliflower as the potatoe veggie burgers crumbled as the meat and add string beans and season the mashed cauliflower with your favorite seasoning and add some cheeze bam you have a delicious mock veggie friendly shepherds pie enjoy!..

For L&G, I put 1.5 cups of 2% cottage cheese in the food processor, and pulse and blend in 1 whole bunch of Italian Parsley (sometimes I add some cilantro), and green Tabasco, plus salt and pepper to taste. You have to eat it all in one day or the parsley will take over, but you don't have to eat it all at one time. You can dip it with celery if you like. I'm never sure how to measure the Italian parsley so I've been counting it as raw watercress. I have this about once a week. It makes a lot..
I'm not officially a vegetarian, but I prefer the meatless options over meat, any day..

Kohlrobi au gratin. It was FANTASTIC!.
(if you are unfamilar with Kohlrobi like I was, it is a turnip looking veggie that tastes like a cross between a cabbage and broccli. But, it sort of behaves like a potato. That is why it works really well for this recipe.) Peel them, then shave them thin with a peeler. Layer them with salt, pepper some parm and low fat cheddar cheese. bake until golden brown. It was worth searching for the kohlrobi!..

I started Medifast about 6 days back and have not lost any lbs or inches!!! Wondering if any of you had a similar trend?.
I went back to the website and re-read some sections and realized that perhaps I am not consuming enough calories in my lean and green meal. 5 Medifast meals only give us 550 calories (max) so the lean and green meal has to be at least 350 calories. I get so full on the 5 meals that I end up eating only 2 veggie patties (typically 200 calories). I will add some cheese for more calories and protein..
Any thoughts on this are appreciated..
I like to have 3 or 4 egg whites scrambled with a slice of american cheese in the morning with my hot chocolate/peach tea/etc... Gets more protein in, and keeps me feeling fuller throughout the morning...
