Don't know about cocoa powder, but for myself, I'm not going to worry about 1 tsp. divided between 5 meals..
But anyway, I just made these without it because I don't have any in the house. I subsitiuted 16 Cappella double chocolate drops...
Boy, that sounds good! I'm just one week into the program and have already been pleasantly suprised with all the great recipes coming off this board. I am going to make these as soon as I get some eggs. I didn't get those in my newbie order, but I'll be putting another order in in two weeks. This will definitely be on my list to try! This is my new favorite "real size muffin" recipe. I am a chocoholic and this hits the spot just fine. Thank's for posting this recipe. The scrambled eggs do wonders for the muffin and bread recipe's now!.
I remember the day's of gooey wet muffins and stopped making them for awhile they were so gross in the middle no matter how long you cooked them or how small you made them. I also used 2 maple brown sugar and only 1 apple cinnamon to make them a little sweeter and baked them about 20 min. it made 10 regular size (2 per meal/5 meals). It worked out great. They stored well in the refrigerator too..
I'm gonna try this in a 9" cake pan and bake it longer (25-30 min) to see if it will make a cake and frost it with a thin layer of Walden Farms Marshmallow or Caramel dip and cut into five meals. My husband's birthday is Saturday...
I'm so glad you said that. I cannot get muffins to come out without that wet center no matter what I've tried. I even tried turning on the convection feature of my range (I have a large commercial range) but that didn't work either. I've noticed that some people use toaster ovens. I wonder if that cooks them differently than full-sized ranges...
Gotta tell you, I made them again yesterday and this time I used 2 Tablespoons of sugar free chocolate syrup and 2 Tablespoons of sugar free coconut syrup. Turned out wonderful. I use those larger silicone muffin pans and 12 minutes is perfect. I don't want them over baked, too dry! The smaller muffin pans would make a taller muffin therefor you might have to bake them a little longer. These are my favorite!..
Hey Pam? How would we log it into our menu for the day? I made them without the cocoa and syrup (I don't have all that handy) and they still came out decent enough to eat (not GREAT, but not too bad either)..
I put the recipes into the private foods, but when you do that, the calories and carbs (nutrition, so you know the important stuff) comes up but it doesn't count on the left where it keeps track of Medifast meals. If that is important to you, log an oatmeal 3 times, an egg once and a pudding once whenever you eat them. I mean mostly we need to see the calories and carbs, right?..
Ps - Look for my recipe for fruity muffins. My sister says they are her favorites!..
I must be doing something wrong...? I've made cookies before, and made these today and they have the strangest weird icky taste....I'm not picky and like most of the Medifast foods (except for the strawberry shakes) so I don't know what to do. I followed the recipe exactly and when I bit into them they have a sharp chemical-like taste. HELP! I've been doing Medifast for a month now and don't want to get bored!..
Sounds great, I think I will forego the cocoa powder too, especially since I dont have any on hand, lol. I like the fruity ones too...thanks!!..
I saw this recipes this afternoon and ran home and made them. They are SO good! Thank you so much for experimenting! I used 2 maple and brown sugar and 1 apple oatmeal, I also used german chocolate cake SF syrup and no cocoa powder and they turned out fabulous. I made 20 mini muffins to impress my stomach through my eyeballs!..
I made two batches last night because I am away from home two nights and three days a week so I need portable food. One I added peanut butter drops to and the other I use the chocolate and coconut davinci syrup. I just love them. Try the fruity ones as well. They make for a good change. I love to mess wiith recipes and make them work for us. Thanks!..
