1/4th a cup of egg beater is the equivalent to 1 egg. However - they aren't equivalent in terms of "approved lean portions." I'm also not sure they're exactly equivalent in terms of cooking, because of different consistencies...
Eggs are not out. See the meatless options. You can have 3 whole eggs a day as a lean...

In my recipes, how do I substitute Egg Beaters for whole eggs?.
For recipes, simply use Egg Beaters as follows:.
4 whole eggs = 1 cup Egg Beaters.
1 whole egg = 1/4 cup Egg Beaters.
1 egg white = 2 tbsp Egg Beaters..
Yep you can have eggs, just Nutrisystem wants you to limit how often in a week you do eggs due to cholesterol. That was a very old post from when I first started, I'll have to try and find it for you...
I too am curious about this egg thing- I thought I remembered being told no eggs. I love eggs on my salad and veggie omelets but am not a fan of egg beaters as a food. I would love to know how many whole eggs or egg whites I ca use to equal a meat serving..
Thanks..
3 whole eggs or 11 egg whites for a full lean serving..
I usually eat eggs once a week. I'm not supposed to because I get a skin rash, but I don't eat meat, MSF has too much carb/sodium and I stink at cooking tofu, so it's a trade off for me. I get tired of fish and more fish. I tend towards egg beaters, but I also love to top a salad with one can tuna (after draining it's about 3.5 oz) and 1.5 hard boiled egg..
Emma..
Well, I'm curious too, cuz I am having two cups of egg beaters today for my l and g..
Thank you! Can't wait to have an egg white omelet tomorrow!..
You want to limit your self to 3 whole eggs per week no more than that. But you can have as much egg beaters or egg whites as you want...
