I have never used a grilling basket but I grill veggie skewers all the time. I use any combination of mushrooms, tomatoes, onions, broccoli, cauliflower, squash, pineapple. I put them on the skewers, spray with canola oil spray or Pam, sprinkle with seasoningsI use Mrs. Dash and a very SMALL amount of season salt. I grill until they are done and I like them to have some grill marksdelicious! I make extra skewers as the veggies are good warmed up the next day...

I spray my veggies with some PAM olive oil cooking spray. Sprinkle with some McCormick Grill mates Roasted Garlic and Herb spice mix over them, then drizzle some Balsamic vinegar over them. This is while they're either wrapped in foil, or put in a disposable foil pan and just cook them on the grill like that. Great stuff. Works great roasted this way too...
Never grill with EVOO! EVOO has a very low smoke point so you are just wasting expensive oil and ruining the taste of it. I marinate veggies in balsamic vinegar, fresh garlic and herbs (rosemary, thyme, sage) and add just a drop of oil. Other times I spray with olive oil from a misto and season with salt and pepper or one of the McCormicks spices. FF italian is a good choice for marinating too. Play around with different spices and flavors and see what you like..
Leftover grilled vegetables are great cold on salads during the week. Roasted peppers are great on salads too and no oil is needed...
I have a grilling basket and just spray it lightly with a little Pam Olive Oil. I grill zuchinni and yellow squash, portobello mushrooms, green, red, yellow, and orange bell pappers, and onion. I marinate everything in a FF dressing and season it with a little garlic and fresh dill...
They are also great cold, mixed in a salad!! YUM!..
