I made a stuffed bell pepper casserole..
Brown your turkey season with your favorites I used garlic and some salt and pepper.
Slice bell peppers (any color).
Rice cauliflower (optional).
Can of stewed tomatoes.
Mix it all together and bake for oh twenty or so mintues. If you have smaller portion you can even add a little mozzerella to the top...
Funny you should ask, since I just finished a yummy L&G using ground turkey. My kids call it Cabbage un-Rolls.
I cook my turkey - measure out my serving size. Then I add 1/4 cup of low sodium chicken broth and then add in chooped cabbage, grated cauliflower and tomatoes, and spices. I put a cover on the pan and let it simmer for a few minutes until the cabbage cooks thru.
I top with 1 tbsp salsa before serving..
Its really yummy and really filling!.
I will give one word of warning though turkey+cabbage+cauliflower = gas!..
I like to use the ground turkey to make a meatloaf..
3/4 cup chopped zuchinni.
3/4 cup chopped mushrooms.
Little bit of onion flakes.
Garlic and herb seasoning.
1/2 cup egg beaters.
1/2 cup lowfat cheese.
Little salt and pepper..
Bake it in a meatloaf pan and then the last five minutes I put some fire roasted tomatoes on top and let it bake for a few more minutes.

I made lettuce wraps like what you get at PF Changs..
Brown the ground turkey (i used 93% lean).
Chop up 1/4 red pepper, 1 celery stalk, 2 white mushrooms, and 1 clove garlic and saute all in a separate pan. Add browned turkey to veggies and then add 1/2 tsp sesame oil and 2 tsp lite soy sauce, stir. Use lettuce leafs and place spoonful of turkey and veggie mixture in middle of lettuce and roll up. Super yummy!..

1 package of ground turkey (1.3 lbs) 93% lean.
1/4 of hot sauce.
OR.
2 tbsp of light ranch dressing and 1/4 cup of parm cheese.
Lite Laughing Cow Cheese (i cut each wedge into 4).
Mix meat and either hot sauce or ranch/cheese well and form into meatballs. Put into PAM Sprayed, paper lined muffin tin...into each meatball press in a 1/4 wedge of LC cheese (I like the garlic & Herb)...bake in 350-375 degree oven for 25 minutes. They are very good!..
Ground Turkey Chili.
1 container of ground turkey (99%) fat free.
1 bag of Boca crumbles.
2 cans of Chipotle diced tomatoes.
Mrs. Dash Fiesta Lime seasoning.
160 calories for a 1 cup serving. There are some carbs (about 6 per serving for tomato and boca). This is very filing and yummy with lots of protein.
Note that you can also make it with just the ground turkey, one can and Mrs. Dash. The serving size is a little different. You will need to calculate it, as I don't remember..
This is great for splitting and L and G lunch (1/2 cup for lunch, 1/2 cup for dinner). I used it all the time during 5+1. Really made my lunch seem more normal..

Turkey Burgers:.
6-7 oz ground turkey breast.
1 tsp. onion soup mix.
1 tsp. water.
Grill 4 minutes each side and serve on a grilled portobello, topped with a melted Laughing Cow wedge and a slice of tomato. Also serve with baked parmesan zucchini fries...
Brown 6-7 ounces of ground turkey in a skillet with olive oil. Add a few handfuls of baby spinach, cherry tomatoes, mushrooms. Top with balsamic vinegar. You can either eat it alone in a bowl, or serve over cooked zucchini noodles or broccoli florets. soooo good!..
I made turkey burgers tonight. I just added some onion Mrs. Dash and cooked them on the Foreman. I wrapped mine in lettuce. Yum...
