That would be 2 meals right? Well, in a pinch, Nutrition Support has said you can use 1 cup of milk in place of an Medifast meal. So, you can have a cup of milk and then for the 2nd meal just do your L&G for the day as your lunch! Problem solved!..
Another suggestion for you in the future is to keep some Medifast meals at work in your desk. Accidents like this happen and then you'll always be prepared.

Most Medifast meals are around 15g of carbs each and around 110 calories. Any kind of milk she drinks will be around that limit so that is probably why Nutrisystem recommends it if needed in place of a meal...
I agree, if you substitute milk there is no need to try to eat meals lower in carbs later in the day - the carb content of milk and Medifast meals is comparable. If you choose a cup of skim milk, the calorie content is comparable too...
