Hello, my name is Matt, I am a Registered Dietitian with Nutrition Support..
Buffalo stew here we come, heat up the pot!!! We have made modified the recipe somewhat to make it fit with the Medifast Plan. Dried mushrooms are too high in carbohydrates, so we have eliminated them, substitute white mushrooms. We have also decreased some condiment serving sizes to make it fit. Here is the modified recipe..
4 servings.
30 oz buffalo tri-tip.
2 cup diced tomatoes.
4 cups op veggies.
2 tsp onion powder.
1.5 tsp garlic powder.
2 cups low sodium beef broth.
Per serving: 1 leanest, 3 green, 3 condiments..

Hi Lisa. Yes, you are allowed canned tomatoes. I try to get the low or no sodium tomatoes, but you don't have to if sodium is not a problem for you. Just be sure to count this stew as your lean and green for the day when you choose to eat it...

In the stew my mom used beef, cauliflower,canned tomatoes,bean sprouts,fresh little mushrooms,shredded cabbage,celery. For the broth she used a beef seasoning powder that she added to the water and the juice from the canned tomatoes. I think the sodium for the seasoning was about 250mgs. Is that still ok or what would be more ideal? I know the veggies are on plan or close right? This is a start. I really don't have any idea how much I am supposed to eat of it since it was cooked in the crock-pot and the veggies weren't measured. If someone has time can you look at my ingredients and help me to adjust it for next time so I can do another big batch in the crock pot and freeze some.

The recipe says 4 servings. This is going in my recipe file...
For fans of the beef stew..I reduced the veggies yesterday and served it over spaghetti squash. Just reduce the veggies by as much spaghetti squash you want to serve it with. Does that make sense? Hope so...
