Funny, I was just thinking about this myself, a friend gave me a couple of jalapenos yesterday. Well, I don't think I could make a whole L & G out of them due to the heat, but maybe a portion of my L & G to use them up would work. First I would halve them, blanch in boiling water briefly, dry them. Then chop fine some leftover chicken, or us MSF crumbles mixed with wedge of LC light cheese (either the chipotle or garlic herb are my faves), add a Tbsp or so of light cream cheese, mix well till cheese is blended in, fill peppers and bake at 375 or so till browned on top? Or skip the LC cheese, just use them lite cream cheese and whatever cooked meat, then top with a strip of that Sargento reduced fat pepperjack sliced cheese? What do you think.....
We make them all the time. I buy the canned jalepeno. I rinse them and char them under the broiler. Then I slice it down the middle and scoop out the membrame and seeds. I usually have 2 or 3 and I count it as a condiment not a green portion. I use one wedge LC and split between my poppers.
Dip in a little sour cream or salsa..
You can stuff them with anything you want I just don't like to take away from my L&G so I try and stay within condiment, HF guidelines..
According to Medifast 1 T of jalepeno is 1 condiment..
The food and nutrition help said we could have 1/2 cup of jalapenos to count as a serving of green veggies. I usually take three fresh jalapenos, cut them in half and put some LC cheese in it and top with a little 2% cheese which I deduct from my lean. I bake them in a 400 degree oven for about 40 minutes. When I have to go to a party, I have made these and brought them as my own little appetizer..
One time, I took a very thin slice of ham and crisped it up in the skillet and crumbled it on top of the poppers. Yummy!..

There is a recipe for Tomato/Jalapeno Bread on the board someplace. I mix COT soup, 1 t Baking powder, 1 chopped Jalapeno (depending on size 2 if they are small) 1 Light LC wedge, I like Queso Fresco & Chipotle for this. 1/4 C South western egg beaters. Cook it in my sandwich machine. I don't remember how the original recipe said to cook it. If I don't have the South Western Egg Beaters I add some Franks Hot Sauce..
I eat it about 2 or 3 times a week...
I deseeded 3 jalapenos blanched them for a few minutes finely chopped a 1/4 cup chicken and finely chopped broccoli 3 TBS. Took a wedge of garlic and swiss LC cheese creamed it together put in 6 halves. Broiled for a few minutes. put a little franks red hot OMG that is the best. I'll have to really sit down and do figuring for larger portions..I did not crave spicy food until I started this program...
