Tonight I am making DH and I a wonderful dinner:.
Grilled Portobello Mushrooms with Tomatoes and LF Mozzarella.
Serves 2.
1 tablespoon olive oil, plus a bit extra for greasing grill pan.
2 large portobello mushrooms (about 5 inches in diameter), stemmed.
Salt and freshly ground black pepper.
1.5 tablespoons extra-virgin olive oil, plus extra for drizzling.
1 cloves garlic, minced.
1 small to medium sized vine ripened tomato, cut into 1/2-inch pieces.
4 ounces skim mozzarella, drained, cut into 1/2-inch cubes.
1/8 cup chopped fresh basil leaves.
Whisk the extra-virgin olive oil and garlic in a medium bowl to blend. Add the tomatoes, cheese, and basil and toss to coat. Season the tomato salad, to taste, with salt and pepper.
Prepare the barbecue (medium-high heat).
Rub separate amount of olive oil over both sides of the mushrooms. Sprinkle the mushrooms with salt and pepper. Brush olive oil on grill pan to prevent mushrooms from sticking.
"Stuff" Portobello cap with mixture. Place mushroom gill side up on grill. Grill until starting to soften and cheese starts to melt. Remove from grill and place on serving plates. Sprinkle with more salt and pepper and serve..

Today I'm cooking up some homemade chipotle sausage (made from ground turkey) with lots of grilled bell peppers and a teeny bit of grilled onion...
We're having a favorite, stir fried veggies and tofu.
I use small amounts of broccoli, cauliflower, cabbage, green beans, garlic and a few onions (I know, off the list now, but I don't use a lot and can't stand it without them!), steam the veggies first while the tofu cooks in a skillet with cooking spray. Then toss in the veggies, some soy sauce, and sprinkle with Gomaisu (sesame seed/seaweed mix).
I never eat quite as much tofu as I should for the lean, but I'm not hungry, so I think it's okay now and then...
I had ground chicken fried in PAM with mexican seasoning mixed with 1/4 can of Rotelle tomatoes over a spinach/romaine salad. I only used 5 oz chicken so that I could use 1 oz of 2% cheddar on top...
Roast beef and fake mash potatoes.... aka, smashed cauliflower... YUM.

I tried a new EASY receipe with some Mahi Mahi tonight.....
Mahi Mahi.
Tiny bit of olive oil.
Garlic to taste ( I like lots).
A can of Rotel (diced tomatoes and green chilies).
Grilled the fish on my grill pan with all the above.
Served with green beans.
Yummy!..

Mmmmmmmm.........I'm having turkey meatloaf, made with extra lean ground turkey and "fried" cabbage, yummy!!!!! God love the person who came up with butter flavor PAM!!!!..
