How do you do your asparagus, SK? I don't much care for it but I am thinking I could oven roast some other type of veggie. What's your method there?..

Today is my husband's 65th birthday! He is on Medifast also. We are going to dinner with friends tonight to his favorite steakhouse. We will have a filet (medium rare) and a salad. Last week we were on the road and ate seafood all week so we are ready for some red meat!..
Actually I roasted the aspargus in a pan on top of the stove but have roasted it in the oven before. I simply spray the pan with Pam, throw in the asparagus, spray a little bit of Pam on the asparagus and sprinkle some garlic salt on top. Let it cook at medium until it looks roasted. It is YUMMY this way.
To roast other veggies in the oven, I would use a cookie sheet coated in Pam, thinly slice the veggies, spray veggies with Pam so the any seasoning will stick and roast at about 400 degrees. I like to do this with squashes, eggplant, mushrooms and more. Veggies taste great with a little rosemary sprinkled on them as well...
Whoa, is spaghetti squash legal? (I'll keep my fingers crossed for an affirmative response.)..
I'm sick and I suppose a little grumpy so I am going with some medifast approved comfort food. Tonight I will have steak and mashed cauliflower with Molly MCCheese...such a big fan of it. Tastes like steak and potatos..
I had grilled salmon (first time) 2 tsp salsa & 3/4 C green beans w/ onion. I reserved the other 3/4 cup veges for dinner - I sauteed zucchini, yellow squash, red onion, tomato, peppers, and mushrooms in a skillet w/ Pam and a little water and seasonings. Wow...you know for my first Sunday on MF, I made a baked pasta dish for my family and made a similar dish..no pasta..ground turkey... for me. But thank you for posting this, I could easily make a nice turday breast for the whole family for next Sunday. Awesome...and I can't wait to try roasting asparagus!..
I made the mexican chicken and mexican "rice" recipe that was posted on this forum last week it was absolutely wonderful!! And, it makes 4 servings, so I'll be having it again tonight!!..
