I have not tried to cook with them (I like them as bars), but one thing that occurs to me is that you could use a Medifast vanilla pudding blended with 1Tbsp of cream cheese (counts as your healthy fat). Crumble the lemon bar, and mix with the pudding. 1/2 of this would be a meal + 1/2 half of your healthy fat. I think it would come out like a lemon cheesecake thingie!.

That's a good idea...I have also just spread a 1/2 tbsp on either a strawberry or lemon crunch bar before if I'm low on fat (which I always seem to be when I eat fish or shrimp!)...just doing that is good and tastes like a cheesecake. Or maybe I'm just desperate for it to taste like one...but it's still good...
Try breaking the bar up into little chunks and freezing it. Tastes really good for some reason...
2 Vanilla shake; small amount of vanilla extract; 1 Tbs Eggbeater; 1/8 tsp baking powder; 3 pkgs True Lemon (2 inside recipe and 1 sprinked on top the all the cookies); crushed up Lemon bar. Just enough water to make into batter consistency. Bake 13 to 16 minutes at 350. Great Lemon Cookies. Freezes well. Make recipe into 3 cookies (only risk is that not equal amount of chunks in each cookie - I live on the wild side).
Sometimes I add SF Marshmallow syrup and cut True Lemon down by a pkg...

It's a brand of bottled lemon juice. It's usually found in the juice aisle of any grocery store...

I buy the packets (the unsweetened ones). They store well. I also use them to season other recipes ... like cacciatore sauce. Adding a little to that means that I use less salt. Or make a sauce for your fish.

I found True Lemon next to the Crystal light and it's a powdered product. Check mfg site for locations near you. Its in almost all the stores in Chicago area. I like the True Lemon and True Lime. The True orange isn't very good to my taste. True Lemon and a pkg of vanilla pudding (put in freezer for 50 min or so) is my absolute favorite Medifast meal...

I cut up the lemon bar and froze it. It tasted much better to me...thanks MT Cup!! I will also try the other recipe too :-)..
The True Lemon I buy is a little powdered packet of lemon juice that comes in a box (you can also get true lime and true orange)..
The nutrition info says it has 0 calories and says <1 g. of carb. For me, I count this as 1 calorie and 1 carb..
