I came up with a crab cake recipe that's really good. Just search for it in the search function. My headhurts from the political debate in the OT forum or I'd find it for you!..
They aren't exactly "recipes," but for the crab salad, I'm mixing canned crabmeat with Galeo's sesame dressing and a dash of curry powder, served over a bed of greens. Simple!.
The crab bisque turned into seafood bisque because I had leftover fish and some giant shrimp in the freezer. It is sooo good!.
Heated one packet of the cream of tomato soup on the stove with extra water and Better Than Buillon lobster flavor. Added some chopped fresh tomato, dash of sherry, cayenne pepper, lime juice and the fish, shrimp and crabmeat. It made around 3 cups total, so it's a hearty meal..
For both meals my seafood total was 7 ounces, plus 1 Medifast meal..
Now I am dying to try those crab cakes!!..
Lydiaa...I searched for your crab cake recipe and couldn't find it. Do you think when your head stops hurting you could post it for us??.
Thanks!!..
I haven't done much fish other than tuna/swordfish steaks and tuna fish in a can for quite a while as I've developed a bit of an aversion to most seafood over the past couple of years. But, to vary some of my old dishes to make them Medifast friendly.....
Mix 5 oz cooked crab meat, 2 oz FF cream cheese, dash of garlic salt and 1/2 tsp ground chipotle pepper and form into small balls. Roll them in some crushed Medifast crackers to dust them and spray on some buttery spray. Bake it off at 400 for 10 minutes or so and you've got crab poppers..
You can also use the popper mixture, minus the chipotle, to stuff jumbo shrimp. After deveining the shrimp, butterfly it along the back and flatten out the part where the head used to connect so that you can stand it up with the tail bending back over the top of the thing. Make a ball of the crab mixture about 1/2" in diameter and push the ball down onto the flattened "head" section, then curl the tail back over the newly placed crab ball. Secure the tail with a toothpick, if necessary. Bake at 375 for 25-30 minutes or until the shrimp turns completely opaque..
Mix 4 oz cooked lump crab meat with crushed Medifast crackers and several sprays of I Can't Believe It's Not Butter. Form into a ball and wrap it with a 3 oz flounder fillet. Sprinkle with true lemon, salt/pepper to taste and some paprika for color. Bake at 375 for about 15minutes (you only need to cook the outer layer of fish since the crab is already cooked) and you've got stuffed flounder..
You can stuff a lobster tail similarly by cutting out and removing the under belly, then pulling the tail upward to expose the inside of the shell. Stuff that cavity with the crab meat stuffing, lay the meat of the tail back down over it, spray with ICBINB and season as you like. Grill on medium high, keeping the lobster on it's back so the juices don't run away, until the lobster turns completely opaque (10 minutes or so)..
Now, these cooking times could easily be high, so keep your eyes on it! When I was doing up these recipies, I had MUCH larger portions that I was doing. I reduced the cooking times purely by estimating, so...be warned!..
I bumped it for you rio! My head still hurts!..
Yum guys, those are some awesome ideas, definately trying the poppers. Thanks... and keep 'em coming...
Sounds yummy lydiaa...thanks for bumping it up! I hope your head feels better soon!!..
