Eggbeaters dont have the fat and cholesterol of whole eggs. They have a lot less calories, similar to egg whites. They are basically egg whites with some yellow coloring in them, and a few mild seasonings..
So you can have one whole egg for 80 calories or 1/4 cup of egg beaters (same volume) for 30 calories, and no fat...

If you want the ease of eggbeaters but don't like the additives, I found that my trader joes carries an "all egg white" substitute as well as a "organic" eggbeater.
I've tried all variations and don't taste difference b/t eggbeaters and these specialty...
I've seen people mention doing a quiche with them, but doesn't quiche have a crust?..
You can definitely make a crustless quiche. Just follow the directions for whatever recipe you're using, omit the crust and bake as instructed. Guess this could also be called a frittata.....

I was trying the egg beaters this weekend and am soooo confused about the serving size. I have seen it listed as two cups. But does that mean cups as in the measurment standard, or cups as in they come in a package of three cups and you're supposed to have two at a time. I went by the measurement this weekend and realied one package of three doesn't even equal two cups. Help??..
