Here's one of my recipes:.
Chicken (bone or boneless).
Dab of olive oil.
Little bit of sodium free chicken broth.
Sliced zuchinni.
Baby bella whole mushrooms.
Fresh garlic.
Bay leaf.
Crushed red pepper.
Cook in crockpot until moist...delicious!..

Doesn't the zucchini just turn to mush after cooking for so long?..
Zucchini doesnt turn to mush. I slice them the long way and keep them chunky sized...
I usually put several boneless chicken breasts in the pot. Mix a package of McCormick chile spices with a couple cans of Rotel (tomato and jalepenos) dump it over the chicken breasts. Cook on high for 5 hrs. Comes out really good. My husband usually wants salt added to the pot but since I don't usually cook with it he adds it after to his own plate. If you want the salt you can add a some the the chicken breasts before you put them in the pot.

In the winter, I frequently do a Medifast friendly chili recipe in the crockpot:.
2 to 2.5 lbs extra lean ground venison or ground turkey.
2 16 oz cans Italian flavored diced tomatoes.
2 medium onions finely chopped.
3 medium zucchini finely chopped.
2-3 cloves garlic finely chopped.
1/4 tsp cayenne pepper.
3-4 Tbsp chili powder (to taste).
1/2 tsp paprika.
1 cup water.
Brown venison or turkey and salt and pepper to taste. Drain grease and fat. Add to crockpot along with remaining ingredients. Let cook for 6 hours on low heat...
