Well... I love it plain, but I have heard people drizzling a little SF chocolate syrup over the top, or adding some of those cappella coffee flavor drops. I think someone said the strawberry cheesecake drops were a good match with the vanilla pudding, as well as the toasted coconut. You could always add 2T of sugar-free/FF pudding mix in a flavor you like, to it with a little extra water (then you would count that addition as your snack for the day)...
I personally don't care for the vanilla pudding either (I thought I was all alone out there!), but I use it to make BT2's custard recipe with 1 egg white and cooked in the microwave. It changes the flavor and texture completely. Do a search for vanilla custard in the recipe forum...

Here's the recipe!.
BT's Egg Custard.
1-vanilla or banana pudding.
1- egg white.
1 pkt Spenda French Vanilla Flavor Blends (or 1 pkt Splenda and 1/2 tsp vanilla extract).
1/2 c. water.
Mix all of the above with a hand mixer until well blended and nuke for 1 min at 50% power and stir the cooked "custard" a bit. (like slightly folding).
Then another 60 sec or until the "custard" is "set", stirring every 10 seconds..
Sprinkle with cinnamon or nutmeg and refridgerate for 15 minutes..
The possibilities of adding different flavorings are endless!.

Mix in a TBS of pudding mix that you do like - pistachio is good. It will count as your snack..
Also, mixing a splenda packet and 2 True Lemon packets are great if you like lemon..
Make sure whatever you do, you make the pudding in advance and get it really cold. I like mine out of the freezer best..

Subtract two ounces off your lean and green for this one....
Whip two ounces of low-fat cream cheese with 1-2 packets of Splendra and a packet of True Lemon. Add the vanilla pudding mix and about 1/3 cup of ice water/SF vanilla syrup combination. Mix well..
Chill for 30 minutes - top with a tablespoon of Walden Farms Blueberry Syrup -.
Voila! Blueberry Cheesecake Pudding Dessert..
Just goes to show how differenct everyone is. I love the vanilla pudding because it is so versatile. I will mix in some SF FF pudding mix (counts as a snack). My fav is pistacio although I like the white chocolate and the cheesecake flavored pudding mix too.
When I REALLY want a treat, I'll mix in the 1 T. of peanut butter we're allowed as a snack now. MMMMM...
Mix a TB of Davinci SF Caramel Syrup into it and it is really good!!..
