Sorry.. I should say encillada sauce...but Im sure it would taste good with salsa too..
Wow that sounds delish!!! I had thought about using the cream of chicken soup and spicing it up for a mexican flavored sauce to go with chicken. Anyone tried this idea??? I thought about adding some green chilis and taco seasonings. I might have to give it a try but I need to order some cream of chicken soup first. Thanks for the idea now you have my taste buds hollering for mexican food!!!! LOL!!!..

I tried making a sauce with the Laughing Cow before and it kind of separated into little cheesy blobs. I didn't think to put it in the bullet to make it smooth, duh!..
Not to sound like a total anal retentive person (which I am, by the way), but how much water and how much chicken stock did you use? Did you use one small wedge of cheese? I am one of those people who has to know exact measurments. I can't eyeball anything Drives me crazy when I ask someone how to make something and they tell me, 'oh, just a pinch of this and a dash of that'. I mean, how much is a pinch or a dash? Rachael Ray aways says, "A handful of this..". Well, Rachael, do you realize that my hands are much bigger than yours???..
True... Mlansell. I guess if I have to remember how much I put I would say about 1/4 c water and 1/4 c stock and let it broil and thenadded a tablespoon of encilada sauce then put one laughing cow wedge of the lite regular flavor. After this use your magic bullet or something similar. Hope this helps..
