Mint Chocolate Chip Ice Cream recipe for Medifast

Yesterday, it was an absolutely gorgeous, sunny day here in beautiful FloridaAfter doing some pool aerobics and a little relaxing, I thought I'd head into the kitchen and try a new recipe I'd been thinking about. Here's what I came up with:.
Mint Chocolate Chip Ice Cream.
(makes 4 meals).
2 pk Medifast Chocolate Pudding.
1 cup water.
2 cups crushed ice.
1/8 tsp Pure Peppermint Extract (1/8 condiment).
2 Medifast Mint Chocolate Crunch Bars (cut in half and chopped into small pieces).
4 small containers with lids.
Blender.
Combine the first 4 ingredients and blend until smooth (I used my Magic Bullet with the pitcher). Divide and pour into 4 small containers (yields approximately 1 cup each). Stir in 1/2 mint chocolate crunch bar that has been chopped into very small pieces. Put lids on containers and freeze for 1 hour. After 1 hour, stir and eat if you like soft serve or return to freezer. The length of time you leave it in the freezer will determine how solid it will become.
The combinations are endless!.
Not only is it delicious, but it takes a long time to eat, and that's always a bonus in my book. I love biting into one of those tasty chunks from the bar. It's a nice crunchy/creamy surprise!.
I like the variety and convenience of having different Medifast meals ready to eat. That's why I love the Medifast chocolate covered cinnamon pretzels I keep in the freezer as well. A favorite quick L&G I keep on-hand is the wonderful Cauliflower Pizza. To me it's all about variety and convenience.

That does sound great. I will have to try that, thank you for sharing. I'm not normally a big fan of mint but lately I have been looking at the mint ice cream in the store, so it's ironic you posted this receipe. Perfect timing!!!..
That sounds so good! I'm thinking if you did it with chocolate pudding and a smores bar, it might be kinda like rocky road ice cream!..
I don't have the mint bars on hand so I'm going to use choco pudding and a peanut butter bar. I will have it for my next meal...
Jennifer - I'm not a mint chocolate fan either, but my daughter used to eat the ice cream all the time. Mint just sounded refreshing yesterday because it was so hot here..
Alisa - It's more icy if you let it freeze solid. You could probably use a little ff cream cheese in the mixture and cream it up. Let me know how your "Reece's" version turns out..
