That's one of my regular faves, too, I make those muffins all the time..
Geez, it's hard to pick my favorite though... maybe Bettina's Thai Coconut Chicken Wild Rice soup... or anything by OrangeBlood!!..
But it's BAKING SODA, NOT POWDER!!!! It says powder in the ing. but soda in the body.......
I've been making them with baking powder this whole time! Next time I'll use soda and I'm sure they will be even BETTER!..

I just made a batch this AM and they weren't that good or that high and I used Baking Powder...Grrrrrrrr.
They also have a very funny flavor...is that b/c of the way the baking powder I've been using is reacting w/ the other ingredients?.
Please confirm which on I should use!..
Like I said, I've been making them with powder. I enjoy them, but they are very dense, not flaky like a deli muffin. I'll try them with the soda next and see how it affects them. Maybe the "muffin lady" will help us!..
No kidding! I made them too and thought the same thing...funny flavor and all. But I also used powder.......
What about my tomato soup crackers is that also suppose to be baking soda?..
I am no Suzie Homemaker but I made the mistake several years ago of using baking powder instead of soda in a recipee and I can tell you the thing was awful..
You use baking soda to help the muffins, cookies or whatever rise..
I tried the recipe found on one of the oatmeal boxes for muffins but of course not being a chef I had an extremely old box of backing soda. The things where alright and tasted good but never rose like I thought they would. I went out and bought a new box and tried again but still they where not what I expected..
So now I stick with the cookies and am getting pretty good at making them. Just have to watch adding too much water or end up having wafers instead of cookies...

HeyLoosie's Greatest Muffins Yet.
* 4 Oatmeal (lots of blueberry seems to be the best, although any combo is still good).
* 2 Eggs.
*Splenda (I buy the bulk bag - and I just pour an amount...like maybe 1/4 cup...always have).
*2 tsp baking powder.
* salt.
* 8 packets TruLemon.
* 1 heaping tbsp. poppy seeds.
* 1/4 cup + 2 tbsp. ground flax meal (I level these measurements instead of eyeballing them).
* Vanilla Extract and Almond Extract - I just pour these from a bulk bottle (Smart & Final...great for poppyseeds, too) but I'd estimate around 1 tsp. vanilla and 2-3 tsp. almond...I'm generous with it and just pour..
* 1/2 cup SF Almond (I use Torani from S&F).
* 1 cup water.
That's it - I just beat it up with a spoon until well blended, then I just pop them into my silicone muffin pans - makes all 12 muffins - and bake at 350 for only 35 minutes...
Hmmm? The new recipe says baking powder also... ??.
Well, I have always made the cowgirl muffin with baking powder and loved them exactly the way they are.
Maybe I'll try the soda next time for fun, but I like them think and dense...
Cruisin240's Cream of Brocolli Cracker.
1 packet cream of broccoli Medifast soup mix.
1 tsp baking powder.
Sprinkle of basil.
Mix together.
Adding the water slowly to the dry ingredients until the consistency is that of a pancake mix, I then dropped it by teaspoon on a baking pan sprayed with olive oil pam.
Bake at 375 for about 6 min and then flipped them over....for another 5-6 min both sides are browned and crunchy..
Also, they seemed to taste better once they cooled completely and had more of a crunch to them..
I add a dash of garlic powder and a pinch of white pepper and after 6 min on both sides I top them with 1/8 cup of 2% Milk Shredded Cheddar Cheese and leave that to melt in while it cools. It's heaven. I have practically every day..
I don't think Id have made it this long without 'em. Im not much a sweets craver but I sure like me some savories.
