I have been eating shrimp lately with cocktail sauce. Yummmmm.
Sauteing it in olive oil and garlic with over spinach is good. You could saute the spinach with mushrooms and lay your garlic shrimp on top of it..
Or you could do an Asian stir fry with lots of good veggies and saute the shrimp in the soy sauce...

@kjduffy, do you make your own cocktail sauce? I tried to find some in the store that was Medifast friendly and they're all way too high in carbs...

Sautee your shrimp in PAM (or warm them up a bit in the pan) - take out of pan and set aside..
Take 1 packet of Low Sodium Chicken Boullion and add 1/3-1/2 cup of water. Put into pan you cooked your shrimp in. Add two wedges of Lite Laughing Cow Cheese (I like the garlic & Herb and it counts as your healthy fat) and stir pretty much constantly until cheese melts (about 5 minutes)..
To this add zucchini ribbons - take a veggie peeler and make strips of your zucchini - throw away the core with the seed. Heat the zucchini for approximately 2 minutes re-add your shrimp and cook for a minute or so more..
This is really, really, good and total takes about 10 minutes to make..

Last night I took some and put it in a skillet with some olive oil (only need a very small amount), and then I added some lemon zest, lemon juice, salt, pepper and ground up ginger. I cooked it until it was warm. It was SOO good if you like ginger!.
I also bought Mrs Dash's tequila lime spice mix in a bottle. Just sprinkle some of that on, some lime juice and also cook in some olive oil and that's good...but a little spicy!.
Also, not sure if you have a Wal Mart near you, but I've been buying my frozen shrimp there. I get a big bag for only $5.00 and that's the normal price! Normally they are $7 or $8 if not more at a normal grocery store! Laughing cow cheese is also sold there for about half of what it is at a jewel or safeyway store...
Yes I make my own. You can have 1/2 tsp of ketchup and 1 tsp horseradish for a condiment. I also add lemon to it.
