I do not know about regular eggs but why wouldn't that work? I would have no clue how to count it...

You could leave it out. Maybe add some Splenda for sweetness...
Wow... I just made a batch of Cowgirl muffins and love the heavy, dense texture and the fruit bits. Now I have to try this one and see which is better!..
How long will these keep (I'm guessing as long as regular muffins)? Should I keep them refrigerated until I'm ready to eat (I wouldn't think so, but you never know)? Sorry for all the questions, but I am leaving for Disney World tomorrow night and am trying to find ways to stay on plan while I'm there. Breakfast won't be a problem, since we have a fridge and I can make pudding or use my Magic Bullet to make shakes...just worried about the days at the parks. I bought ready to drink shakes, but only wanted to take one a day since liquids (in addition to my water bottle) would make my back pack very heavy! Thought these muffins might be handy to make at home, take in the car on the way there, and then transport into the park with me. Thanks for your help. Can't wait to try the recipe!..
I use regular sized muffin tins..
I also refrigerate. I would suggest freezing them. I am not sure how they would be unrefrigerated. Maybe dry?..
