I have been in a quandry since I am out of True Lemon and when I watched the new scrambled eggs cook in the microwave, they totally puffed up. So! I tried adding the eggs to the "Cowgirl Starter" muffin recipe. Success. They actually rise. So here is my version.

The Revised Cowgirl Starter Muffin Recipe.

3 packets oatmeal.

2 packets scrambled eggs.

Splenda if you wish (I don't use any....I think the oatmeal and syrup are sweet enough).

1 Tbs poppy seeds (or not).

6 tbs flaxseed meal (or not).

2 tsp baking powder.

2 tsp extract.

1/2 cup sugar free syrup (Torani or DaVInci or other).

Preheat oven to 350. Spray muffin tin with cooking spray..

Mix dry ingredients together in one bowl. Mix eggs with 8 oz of very warm water. Whip with a mixer until fluffy. Add the syrup and extract and continue to mix for about 2 minutes. Add to the dry ingredients. Pour into muffin pan.

They have a little lighter texture than the original..

When I made them, I used all blueberry oatmeal and lemon extract. Love those.

I Just realized it should be 4 oatmeal and 2 scrambled eggs. Duh. Too much holiday, I guess...

Sounds yummy! It is 6 Medifast meals, then? Does it make 6 regular size muffins then?..

This recipe makes 12 muffins and 2 are a meal..

I do not know about regular eggs but why wouldn't that work? I would have no clue how to count it...

My order with the eggs finally got here, so this morning I did this recipe with peach oatmeal and using orange and pineapple extract..

Yummy! A nice-textured citrus muffin! Great with my morning coffee..

You could leave it out. Maybe add some Splenda for sweetness...

Wow... I just made a batch of Cowgirl muffins and love the heavy, dense texture and the fruit bits. Now I have to try this one and see which is better!..

How long will these keep (I'm guessing as long as regular muffins)? Should I keep them refrigerated until I'm ready to eat (I wouldn't think so, but you never know)? Sorry for all the questions, but I am leaving for Disney World tomorrow night and am trying to find ways to stay on plan while I'm there. Breakfast won't be a problem, since we have a fridge and I can make pudding or use my Magic Bullet to make shakes...just worried about the days at the parks. I bought ready to drink shakes, but only wanted to take one a day since liquids (in addition to my water bottle) would make my back pack very heavy! Thought these muffins might be handy to make at home, take in the car on the way there, and then transport into the park with me. Thanks for your help. Can't wait to try the recipe!..

I use regular sized muffin tins..

I also refrigerate. I would suggest freezing them. I am not sure how they would be unrefrigerated. Maybe dry?..
