Well, the cheese needs to be 3-6g of fat per 1 oz serving for this recipe, but yes that is correct. If you look at the meatless options list, you'd notice you can have 2 cups of eggbeaters and this is a massive undertaking I know because thats what I had 3 nights ago, wow there was so many eggs! You may want to weigh the veggies using the ounce chart that is floating around (I have the book also and it the amounts look kind of high), but I believe all of the recipes in the book are confirmed OP...
Amelia: Considering we get 3 servings of veggies per day, not sure how the recipe makes one L&G. Did you look at how many servings this was supposed to make? ISH is correct in that 2 cups of EB makes one lean serving, but the rest doesn't add up...

On the page you purchase it, it says "In this cookbook, we'll teach you how to make some of the delicious Lean & Green Meals we've developed and tested here at Medifast. It does in fact state that it is one serving total in the book, but it does seem slightly off to me. I'll take their word for it...
I thought the same thing, until I realized that once cooked, the spinach and mushrooms probably reduce a LOT and we do measure both protein and green in the form we eat them. I thought the amount of olives was only 5 though. The cheese would be the remaining amount of lean...
Mushrooms don't shrink that much. I use them in my Frittata all the time. Well, they must know what they are saying...you are right, all that spinach reduces to nothing when cooked. But didn't it say 1 cup olives? That is SO much fat. Oh well, again..it must be right...
Well, it says 1/2 cup (6 medium) black olives..
I havn't made it personally I've only made 1 recipe out of the book so far. Plan on making more, the one I had (Spicy Garlic Lime Shrimp) turned out pretty well considering who cooked it 8^)..
