HAD to experiment with the eggs! Besides, I was trying to show my ElderDD all the MAD things one can do with Medi-packets!.

My lovely ElderDD (jessibean) and I did a Medifast science experiment:.

Medifast Scrambled eggs +.

Medifast Multigrain Snack Crackers +.

Italian spices and Garlic.

= pizza crust!.

We made dust of the scrambled eggs, crackers and spices in the ol' Magic Bullet. Then, added enough water to make a dough. Spread it on the silicon baking sheet (wet your fingers and spread it out to a thin pizza crust shape), then baked at 375 degrees until firm. We topped ours with a little tomato sauce (spiced up Italian style) and some nonfat mozarella cheese, then put it back into the oven until the cheese melted. VERY nice! FINALLY, a crust that is not (a) sweet or (b) overly salty (a la the cream soups)..

Counted as a meal, a snack, and a little off our L&G (for the tomato sauce and the cheese)..

Will have to do it again and take pictures!.

Sounds interesting JudyO. I've yet to bake/cook with the Medifast eggs, but plan to this week when I get a chance. I'll have to give your recipe a try. Thanks for sharing!..
