Welcome to Medifast and good luck. This is MY favorite oatmeal muffin recipe.....
Martha's Muffins.
In a bowl:.
1 pkg Oatmeal mix.
1/4 tea baking SODA (Box).
1/8 tea baking POWDER (Can).
Splenda to taste.
Spices to taste (Dry only).
In a 1 cup measure:.
1/3 cup water.
1 tea white vinegar.
1 tea vanilla (or to taste, or other liquid flavor).
Have a mini bread pan sprayed and ready to go. The oven should be preheated to 350..
You MUST have everything ready to go before you mix the wet and dry as the chemical reaction takes place quickly and we want to trap as many bubbles as possible..
Mix the dry ingredients well, and then mix the wet ones. Pour the wet into the dry and mix up to a smooth batter as quickly as possible. Pour into pan. Bake for 15-16 minutes..
Turn out of pan immediately...
The above muffins is a ditto - for surving the morning!!!! Until I got this recipe, I was getting bored with the oatmeal. I don't have the loaf pan - so I make the same recipe, but put mine in a 12 muffin tin pan (when using 4 packs) (making 3 sorta flat muffins per meal !!) - Some are bigger than others, but spreading it out to 3 wow for breakfast - really feels me up for all morning long!!!!!!! Sometimes I put Can't believe it's not butter on them, & sometimes I put the Waldenfood's Strawberry Jelly Spread on top (0 everything).
Have a dinner recipe I'll post later - but this is the SURVIVAL BREAKFAST - agree with Bettina !!!!..
Gia's Italian Pasta Bake.
1 pkg. (8oz) shiratake noodles (yam only not tofu and yam).
Drain, microwave for 1 minute, redrain and set aside.
In sauce pan combine:.
1/2 c tomato sauce.
1 small plum tomato.
2 T Rotel (diced tomato and green chili).
1/8 t pepper.
1/2 t Kosher salt.
6 basil leaves chopped.
1/2 t granulated garlic (or 1 small clove chopped fine).
1/2 small onion chopped fine (equal to 1/2 c).
6 baby bella mushrooms chopped rough.
Simmer sauce to soften onion on med. heat for 6 min..
Toss shiratake noodles into sauce and simmer for 6 more min..
Pam spray a bread loaf pan and pour "pasta" and sauce into and top with.
3/4 - 1 cup low fat shredded mozzarella.
Bake at 350 degrees for 10 minutes or until cheese is melted and bubbling..
OB Sausage & Peppers (Side note - Visit OrangeBlood's blog if you want to see pictures or get a bunch of great recipes all in one ).
1 lb (or a bit less) ground turkey.
1 1/2 tblspn rosemary (chopped as finely as you like).
1 tsp tarragon (you could use basil instead, if you like.
1 tsp oregano.
1/2 tsp ground cumin or ground chipotle pepper (can adjust to increase spicyness).
1/2 tsp garlic salt.
Ground pepper to taste.
1 1/2 cup peppers and onions (frozen works well).
Spray pan with Pam and sautee veggies until they just begin to brown. Remove to a bown and deglaze the pan with a couple tablespoons of water and pour that in with the veggies..
Mix seasonings with turkey and form into 4 sausage shaped links. Spray with pam and brown all sides (on med-hi heat) in same pan that you did the veggies in. Turn heat to low, pour veggies over sausage and ad 1/4 cup water. Cover and let simmer 10 minutes. Remove the lid and let the liquid evaporate until the sizzle sound begins again. Then plate 'em up!.
This recipie makes two servings. Each serving counts as a lean and 1/2 cup of cooked veggies...
I concur about the oatmeal muffin recipe posted by Bettina. Give DDancer (Martha) credit. These little darlings have saved me from many off-plan splurges.
I put 1 tsp cinn. or nutmeg in mine as well as a bit more vinegar (1 1/2 tsp.) You can't taste the vinegar once it's baked. After they are cool I spread 1/2 tsp peanut butter on top (count PB as a snack) of each one. Heaven.......
Farrell - Re: the Pasta Bake -above - you gave me this recipe on another thread - & I ask this question there also - (just trying to hope you look back to one of the two threads !!!)- How much is a serving size (meal) for me?.

This is one serving. Gia lists it as two servings, but after some back and forth with NS, they confirmed it's one serving...
