Yeah when I make it I reduce the amount of ground and add a little egg beater to help it hold together. What I haven't tried yet but would like to is to save some of the parm puffs and use them like bread crumbs in it too. Flavor and help it to be more of a loaf. Thanks for the idea, mmrl08..
I also make my meatloaf without eggs by adding a little Lipton Onion Soup mix, tomato sauce and form loaf in my crockpot. Pour small amount of Salsa over top, set for 8 hours on Low and come home to the best meat loaf ever!..
