I guess I was looking for specific veggie suggestions. I really dont know any veggies that would taste good. Looking for tasty veggies recommendations.....
Carrots, celery, bell peppers, and asparagus are all good...
I love cauliflower (steamed is my favorite) and green beans (canned or fresh and steamed)..
I LOVE munching on raw baby carrots while I'm preparing the rest of my dinner. They're sweet, crunchy, and satisfying...
I like broccoli, cauliflower, green beans (canned most of the time, french cut is my favorite with garlic powder, sprinkle of salt, red pepper flakes), baby carrots, lettuce/tomato/cucumbers for salads. I've also really started to like mushrooms a lot. Love sauteeing them with onions with fat free Pam and adding to entrees, using in an omelet with egg beaters/egg, or topping a burger..
You should try roasting vegetables. I buy bags of frozen veggies. I especially like "california mix"broccoli, cauliflower and carrots. You can just line a cooking sheet with foil, spray with non-fat Pam/cooking spray and dump out the frozen veggies. I spritz them with more spray and liberally add garlic powder, dashes of salt, red pepper flakes (whatever seasoning you like). You can roast it at 375-425 for 1+ hrs (have to check to make sure it doesn't burn (although some of the broccoli heads may get a little dark/crispy around the edges).
Of course this can also be done with fresh veggies (and is even better).

I use fresh vegetables, sliced up. I put them on a pan with holes in it, spray with Pam, and put them outside, on my patio, on the grill. I close the lid and turn them from time to time. The temperture on the grill is about 400. They get roasted on the grill, and that saves me from heating up my kitchen in the summer. The pan is one I bought for cooking on the grill, at Walgreens, I think....just about any veg will do, but yellow squash really works well...
