My favorite way is to grill them with a touch of olive oil and salt and pepper. I pound them flat just a little bit so they cook evenly and then I have leans for the whole week. I count the olive oil as my healthy fat..
Or my other favorite way is baked in the oven topped with salsa. Depending on how many condiments I have available/want to use, I may top with a little bit of low fat cheese during cooking or a dab of low fat sour cream afterwards...
I sometimes cut mine up and marninate them in italian salad dressing, then "stir fry" them and add broccoli and red pepper strips.... it's delish !!!..
I often marinate them in balsamic, and then bake them covered with tin foil and cut into strips to serve on top of red, green and yellow peppers. I have also baked chicken, then sauteed it with a bit of olive oil, red pepper and lime juice and wrapped the chicken and some other veggies in a romaine lettuce leaf as a faux burrito/taco..
I normally cut them in in chunks and saute them in a pan with rotisserie seasoning. Quick and easy and taste good...
If you like taco salads and have other people in your family to feed, this might be a good option for you. I make this crock pot chicken/black bean/cream cheese recipe occasionally and my kids and hubby love it..
What I do to make it OK for me is pull out my chicken prior to adding the cream cheese. I also scoop out any beans or corn that might make it into my bowl. I shred the chicken, and then it can be used as a base for a taco salad. You can add shredded lettuce, tomatoes, light cheese (if you adjust the ounces of chicken accordingly) and top with a little taco sauce and/or light sour cream if you have the condiments available. Yummy!..
I got this giant bottle of Taco seasoning mix from Costco, which has become my favorite seasoning. It's 3g carbs/20 calories for 2 tsp. 1/2 tsp s/b enough for one serving of chicken. Coat then grill or bake. yumm..
I use lots of fresh herbs. lightly coated with EVOO and then grilled!..

I love to sprinkle a little hidden valley Italian powder dressing mix on my chicken the a bit of pam and fry it then cut it up cold and have a great chicken salad...

I put 5 chicken breasts into a Pyrex cake pan sprayed with Pam. Salt and pepper and a sprinkle of garlic powder. I drizzled 3 T of balsamic vinegar over them and then added about a cup of water. Baked at 375 degrees for a half hour. Yummy! Gives a little of a wine flavor. You might try it with Red Wine vinegar...
